The Red Velvet dinner party had been a year in the making, to be honest, I had already given up on the idea altogether, after 3 failed attempts at achieving it... But you see, It's funny how things seem to work out when you least expect them to, as though there is some mysterious force that takes all the broken pieces of your dreams and puts them together on your behalf- in a much more grand way then you had imagined.
The idea of the night was simple.. to create an elevated experience of modernist African cuisine. Having been working with Marvel-kitchen to create traditional African dishes for 2 years now, I was curious to discover what the future was like for restaurant style refined African food.
The 5-course taster Menu was designed to evoke a sense of discovery, which I believe is vital to the adventurous spirit needed to venture into a modenist Michellin worthy brand of African Cusine.
A MIDSUMMER'S TALE
Elegantly spiced chicken dumpling soup topped with finely chopped coriander leaves, served with toasted Agege bread rolls.
WHO IS IN THE GARDEN?
Oven baked Salmon laid on a bed of traditional Nigerian Bean Cake and a serving on sweetcorn, radish and truffle salad.
A RAUCAUS CACKLE
African style crispy chiken wings served with cucumber and mint youghurt salsa.
LA VIE EN ROSÉ
Spicy lambchops served with yam frites, sweet potato shavings and rosé wine jus.
THE RED OPUS
Red velvet cake and a serving of Mukua infused Cream.
